This pumpkin soup recipe is the perfect meal for a cold winter day. It is hearty, nutritious, and delicious! The best part is that it is easy to make. You will have a bowl of steaming hot pumpkin soup in no time!
Ingredients:
- Pumpkin, peeled and cubed- 250 gm
- Onion, chopped- One medium sized
- Garlic, minced- 2 cloves
- Chicken or vegetable stock -2 cups ( optional)
- Salt and pepper to taste
- Sour cream, chives, croutons (optional)
Recipe :
- In a large pot, Add pumpkin, onions, garlic cloves and four cups water.
- Bring to a boil, then reduce the heat to low and simmer for 10 – 15 minutes. You can steam it for approx five minutes too.
- Using an immersion blender, blend the soup until it is smooth. If you don’t have an immersion blender, you can transfer the soup to a regular blender and blend in batches.
- Season with salt and pepper to taste.
- Ladle the pumpkin soup into bowls and top with your desired toppings. Serve warm!
Pumpkin soup is best suited for losing weight specially in winters and this soup is excellent for all age groups. Try adding one fourth teaspoon heeing, if you have gas issues.
